High Protein, high fiber, low sugar and low fat are a vegetarian's and weight watcher's dream. Did I say it was economical and quick also? Read below and enjoy!
1 - 12 oz vegan (Yves) meatless taco stuffer's
1 - 28 oz can of crushed tomatoes
1 - 15.5 oz can of black beans
1 - 15.5 oz can of light red kidney beans
2 celery stalks
1 small onion
non-stick spray
cumin, Italian seasoning, pepper and garlic power
Coat the bottom of pan with a non-stick spray; saute onion and celery until tender. Add meatless taco stuffer, crushed tomatoes, black beans and light red kidney beans, season to taste, heat thoroughly and last but no least - enjoy!
Nutritutional values: 4 hearty servings! Approx. 30 grams of protein, 371 calories, less than 2 grams of sugar, 4 grams of dietary fiber and less than 1 gram of fat. Enjoy!

My Healthy Exercise Goals for The Week
Exercise Daily 1/2 Hour - 45 minutes
15-20 minute run of a heart rate of 132 - 144
Sit-ups (1 minute - as many as one can)

Vegetarian Recipe for the Week
You have an unexpected person stop over or need a quick vegetarian dinner that says - YUMMY!
1 - 7 oz Buitoni's Pesto w/Basil
1 - 9 oz Buitoni's Fettuccine
1- 10.5 oz of It's All Good's
- 2 Veggie Chick'n Breast in Tomato Tuscan Marinade (52 g protein)
1- 5 oz casaro Imported Grated Pecorino Romano Cheeze
(add as desired on top of dish for garnish or taste)
It's simple, sweet & yummy (S2Y)
- Cook fettucine as directed in boiling water (3-5 minutes)
While fettucine is boiling.......
- place the 2 veggie chick'n in micro for 2 min. read directions
- Drain fettucine when done
- Add Pesto w/Basil to fettuccine (mix well)
- Open the 2 veggie chick'n (careful hot)
Add them to the fettuccine & pesto WITH the marinade sauce!
If you have 3 - 4 people instead of 2, cut the chick'n into bite size pieces.
Serve with a salad & your favorite bread - enjoy!

- Cut out dead branches
- cut at a 45-degree angle - prevents rotting
(allows moisture/water to drip off)
- Cut near the bud about 3/4 of an inch

WOW NANCY! Cooking is one of my most favorite things to do. I was so happy to come across your recipe's and healthy eating advice. I look foward to seeing more on here and absolutly look foward to hearing about new vegetarian meals you come across. I am not a vegetarian myself but my mother was for close to 13 years. I always loved the alternative meals she makes and it is a nice break from the usual beef and chicken every single night. I look foward to making this chili!
